Haskap Red Wine Dressing

This haskap red wine dressing is bold, tangy, and just a little unexpected. The deep, jammy richness of haskap berries brings a natural sweetness and vibrant color, balanced by sharp red wine vinegar and a touch of Dijon for depth. As the olive oil slowly emulsifies, it transforms into a silky, glossy dressing with layers of flavour: fruity, savoury, and lightly herbaceous from the thyme. It’s a dressing that elevates a simple salad, but also works beautifully drizzled over salads (like our Apricot, Mint, & Pea Salad) roasted vegetables, grain bowls, or even grilled meats.

Ingredients
3 tbsp haskap jam (or blueberry, saskatoon, currant)
3 tbsp red wine vinegar
1 tsp Dijon mustard
Pinch of dry thyme
Salt & pepper (to taste)
¾ cup olive oil
Method
Whisk jam, vinegar, mustard, and thyme.
Slowly whisk in olive oil to emulsify (add a drop of ice water if it starts to split).
Season to taste.
